Happy November!

It's officially November and you know what that means! It is time for a new vegetable of the month. This month we will focus on two vegetables: broccoli and cauliflower.

Although you can eat every part of these plants, most commonly we eat the flowers, or florets, of the broccoli and cauliflower plants. Who doesn't want to eat flowers? Plus, cauliflower can come in a variety of fun colors, including purple and orange.

Both of these vegetables are nutritious and delicious! Broccoli is high in calcium, which actually helps detoxify the body of lead. It is also high in Vitamin C, which helps your immune system. Cauliflower is also a great source of Vitamin C, Vitamin K, fiber, and antioxidants.

One of my favorite ways to enjoy both these vegetable is just roasted in the oven (at about 425 ℉) with salt, pepper, and a little (about 2 tbs) olive oil for about 20-30 minutes.
